Because of it tends to get best purity of distilled water, which should not get in contact with any plastic parts along its way to the carafe in order to rule out possible recontamination and not compromise purity – even if the plastic is certified as food-grade and BPA-free.
Another advantage of stainless steel and glass ( not includes stainless steel nozzle shaped by welding ) is that they're robust, they don't rust and are much easier to be sterilized and kept clean.
Because of the 304 stainless steel nozzle shaped by welding ,stuff of welding contains element of heavy metal residue , specially lead , which will leach into water distilled, during distilled water flowing into stainless steel nozzle welding sharp.
So for getting quality pure and safe water distilled ,the water collector and nozzle should be glass and for the same reasons, stainless steel and glass might be a little pricier but are well worth it. Better to spend more now than pay with your health later on.

1. Boiling Water
First of all, most of the water distiller for home use come with an electric heater at the bottom. As you pour in some water in the tank of the water distiller, it starts heating the water up in order to make it boil.
2. Water Reaches the Top
Being lighter than the air inside the water distiller, water vapour rises up. The top of the distiller is comprised of a cooling system. The task of this cooling system is to cool down the water vapour and turn it into water droplets.
3. Impurities are Left Behind
Another thing to notice here is that the water distillation process does not remove impurities from the water, instead, it separates pure water from impurities. Hence, the purified water goes through the process of condensation and moves to the nozzle.
4. No Plastic Trend
Following the industry-wide no plastic trend, most of the modern water distillers come without a plastic material or do not let any plastic material get in the contact of the water.
Hence, you may find that the nozzle of your water distiller is made from glass that drips water into a glass collector.
